(a) Ethyl alcohol (ethanol) is the chemical C2H5OH.

(b) The ingredient meets the specifications of the ``Food Chemicals Codex,'' 4th ed. (1996), p. 136, which is incorporated by reference in accordance with 5 U.S.C. 552(a) and 1 CFR part 51. (c) The ingredient is used as an antimicrobial agent as defined in Sec. 170.3(o)(2) of this chapter on pizza crusts prior to final baking at levels not to exceed 2.0 percent by product weight.
