Cheddar cheese for manufacturing conforms to the definition and standard of identity prescribed for cheddar cheese by Sec. 133.113, except that the milk is not pasteurized, curing is not required, and the provisions of paragraph (b)(3)(iv) of that section do not apply. [48 FR 2743, Jan. 21, 1983]
